Cut the toast diagonally into triangles. Mix the egg with the milk and honey. Dip the toast pieces into the batter.
Heat the oil in a coated pan. Fry the toast pieces in the pan until golden brown on both sides.
Trim the blueberries. Mix the lemon zest with the honey and the blueberries.
Pour the sauce over the honey toast and serve.
