Honey crêpes alla Trentino

Ingredients

  1. 100 g butter

  2. 100 g flour

  3. Salt

  4. 300 ml milk

  5. 6 tbsp Langnese Golden Clear Honey

  6. 2 medium-sized eggs

  7. 2 tart apples

  8. Cinnamon, ground

  9. 2 tbsp lemon juice

  10. 1 tbsp chopped pistachio nuts

Preparation

  1. Melt 30 g of butter. Knead together the flour, 1 pinch of salt, the milk, 2 tablespoons of honey and the melted butter with a handmixer. Then blend in the eggs.

  2. For each batch, melt 10 g of butter in a pan, pour in a ladle of batter and let it cook for 2 minutes. Flip the crêpe and cook for another 1–2 minutes. Repeat this procedure until you have four crêpes.

  3. Keep the crêpes warm between sheets of buttered baking paper in your oven warmed to 100 degrees Celsius. Peel, quarter and core the apples, then cut into slices. Heat 30 g of butter in a pan, stir in 3 tablespoons of honey, the cinnamon and lemon juice and bring to a simmer. Add the apple slices and stir them for 2-3 minutes until they are glazed.

  4. Fold each crêpe twice, drizzle 1 tablespoon of honey on it and dress it with apple slices.
