Honey muffins

Ingredients

  1. 275 flour

  2. 2 tsp. baking powder

  3. 1 pinch of baking soda

  4. 100 g soft butter

  5. 125 g Langnese Forest Honey

  6. 2 eggs

  7. Zest and juice of 1 organic orange

  8. 200 g yoghurt, 0.1% fat

  9. 125 g jcing sugar (sifted)

Preparation

  1. Mix the flour, baking powder and baking soda in a bowl. Mix the butter in a second bowl until creamy. Slowly stir in the honey, eggs, orange zest and juice and yoghurt. Then blend this briefly into the flour mixture. Do not over-mix; the batter should be lumpy. Place paper muffin cups in a 12-muffin baking tray. Distribute the batter evenly among the cups.

  2. Bake the muffins in an oven preheated to 200°C (Gas: level 3-4, convection: 180°C) for about 25-30 minutes. Let the muffins cool. Mix the icing sugar with 2-3 tablespoons of water. Brush the icing onto the muffins and decorate them with Smarties®.
