Kashta Filo Pastry Rolls

Ingredients

  1. For the honey syrup

  2. 400 g (2 cups) Langnese Golden Clear Honey

  3. 250ml (1 cups) water

  4. 1 tbsp. lemon juice

  5. For the filo rolls

  6. 18 sheets of filo pastry

  7. 400 g kashta (Middle Eastern cream)

  8. 225 g (1 cup) melted butter

Preparation

  1. For the honey syrup:
    Pour hot water and lemon juice over the honey and whisk until dissolved.

  2. For the filo rolls:
    Line a baking tray with parchment paper and preheat the oven to 160°C.

  3. Arrange 8 sheets of filo pastry on top of each other and brush the top with melted butter, then take the 4 top layers and turn them upside down and brush the top with butter again. Repeat the same process with the remaining 8 sheets.

  4. Cut the pastry into 10 rectangles. Place a tablespoon of the kashta at the edge of each rectangle and roll the pastry to form mini rolls and put them on the baking sheet.

  5. Bake the rolls in the preheated oven for 35 minutes.

  6. Drizzle with the honey syrup as soon as they come out of the oven.
