Spicy honey fillets

Ingredients

  1. 4 large potatoes

  2. 9 tbsp. Langnese Forest Honey

  3. 2 tbsp. mustard

  4. 3 tbsp. vegetable oil, e.g. sunflower oil

  5. 1 tsp. dried herbes de Provence

  6. Salt

  7. 600 g pork tenderloin

  8. 250 g cottage cheese, 20% fat

  9. 2 tbsp. milk

  10. 2 tbsp. chives, cut into rings

  11. Coarsely ground peppercorns in different colours

Preparation

  1. Wash the potatoes and wrap them individually in aluminium foil, place on an oven shelf and bake in a preheated oven.

  2. With top and bottom heat: about 200°C (preheated)
    Convection: about 180°C (preheated)
    Gas: level 3-4 (preheated)
    Baking time: about 60 minutes (depending on the size of the potatoes)
    Note: Follow the directions for your oven.

  3. For the marinade, mix the honey, mustard, oil, herbs and salt. Rinse the pork tenderloins under cold running water, pat them dry, cut them into slices and brush the slices with the marinade. Let the tenderloins sit for about 30 minutes, then fry them for 5-8 minutes on both sides in a non-stick pan.

  4. Dip: Mix the cottage cheese, milk, honey and chives, then salt and pepper to taste. Unwrap the baked potatoes, cut them open, press the sides together, fill with the dip and serve with the tenderloins.
