Orange Almond Cake
Bring a large pan of water to the boil and add the whole oranges, cover and leave to simmer over a medium heat for 30 minutes. Remove the oranges from the water with a slotted spoon and set aside to cool.
Preheat the oven to 180°C and line the cake tin with parchment paper.
When the oranges are cool enough to handle, cut them in half and place them in a food processor and pulse until pureed.
Place the eggs and honey in a large mixing bowl and whisk to combine. Add the orange puree and combine with a rubber spatula. Add the ground almonds, baking powder and fold all the ingredients together.
Pour the batter into the cake tin in an even layer and bake for 50 minutes in the preheated oven.
Leave the cake to cool completely in the tin before removing.
