Preservatives

Honey doesn’t contain any preservatives. When harvested ripe, it will keep indefinitely on its own. Depending on the variety, however, honey sooner or later forms crystals and turns solid. It still tastes delicious even then. Incidentally, crystallized honey can be liquefied again by gently heating it in a water bath at a maximum of 38°C (corresponding to the temperature in the beehive) – but please never put the honey in the microwave.
